3 QUICK AND EASY DINNER RECIPES FOR AUTUMN | VEGETARIAN AND VEGAN

Hey guys!

I hope you are all doing well. Welcome back to my channel and to a video I haven’t filmed for ages! I am back with some meal ideas for you all. As we are now in September, the weather will be changing in no time.

These recipes are super easy to make and can easily be adapted if you would like to add meat. If you enjoyed, be sure to give it a thumbs up and don’t forget to hit subscribe.

RECIPES:
Hassle-back Sausage Bake:
– 6 vegetarian sausages of your choice
– 1 red onion
– 2 golden delicious apples
– 300g baby new potatoes
– 2 carrots
– 20ml balsamic vinegar
– 3tbsp olive oil
– 1tsp dried thyme
– 2 bay leaves
– salt and pepper
– basil to garnish

Roasted Cauliflower & Aubergine Curry:
– 1 cauliflower, cut into chunks
– 1 aubergine
– 1 white onion
– 2 large cloves of garlic
– 2tsp curry powder (for roasting0
– 1tsp cayenne
– 1tsp tumeric
– 1tsp paprika
– 1tsp cumin
– 1 thumb size piece of ginger, peeled
– a large bunch of coriander split into two
– 1 can full fat coconut milk
– 1 can chopped tomatoes
– 1 veggie stock cube
– 3tbsp olive oil
– 100g basmati rice

Truffle Broccoli Mac n Cheese:
– 1 head of broccoli
– 250g conchiglie
– 30g butter
– 3tbsp plain flour
– 900ml semi-skimmed milk or plant alternative
– 1 & 1/2tsp white truffle oil
– 1tsp english mustard powder
– 1/2tsp cayenne
– 75g cheddar cheese
– 75g aged gouda or similar
– 50g mozzarella
– 30g crispy shallots
