Today I am showing you how I created my better than anything cake I created for KetoConnect’s Keto Cook-Off! The ingredients that needed to be used were avocado, egg, and cinnamon. I went into the kitchen without a plan and came up with this tasty treat. I will for sure make this again but in the future, I will not be including the cinnamon in the crust, it was a little strong and I only used 1/3 of a teaspoon a cross the whole cake!

Preheat oven to 375 degrees
Combine one cup of fine chopped macadamia nuts with 1/3 teaspoon of cinnamon (optional)
Add in 2 ½ tablespoons of melted butter and one whisked egg
Spread mixture across a buttered cake pan in a very thin layer
Bake in oven for 10 minutes or until firm
In a food processor combine ½ of an avocado with 8oz of cream cheese until smooth
Mix in two eggs, three drops of stevia, two tablespoons of your favorite 1:1 sugar replacement and one tablespoon of vanilla extract
In your microwave or in a double boiler melt one dark chocolate bar (85% or darker) with two tablespoons of butter
Once melted combine with other ingredients
Place mixture on a semi-cooled crust (just not on it right out of the oven)
Spread evenly across the crust until smooth
Place back into the oven (still at 375 degrees) for 22-25 minutes
Once cooked place to the side to allow to fully cool
Mix 2 cups of heavy whipping cream with 5 drops of stevia until a firm whip cream is created
Place whip cream on top of the cooled cake and spread across until smooth
In a sauce pan (on medium low hear) melt one tablespoon of butter with two heaping scoops of peanut butter
Add a few drops of stevia (optional)
Stir together until all ingredients are melted and combined
Drizzle with a spoon the peanut butter onto the whip cream
Cover with aluminum foil and place in the freezer for at least one hour so that all ingredients firm up
