• ½ cup salted butter, softened
• ½ cup vegetable oil
• 1 ½ cups granulated sugar
• 1 ½ cups buttermilk, warmed to room temperature
• 3 large eggs, warmed to room temperature
• 1 tablespoon vanilla extract
• 3 ½ cups cake flour
• 4 teaspoons baking powder
• ½ teaspoon salt
1️⃣ Preheat the oven to 350 degrees Fahrenheit. Grease two 9-inch round cake pans with butter or nonstick cooking spray and then line the bottoms with parchment paper.
2️⃣ In a large bowl, use a hand mixer on high speed to cream the butter, vegetable oil, and sugar together until smooth and creamy, about 3 minutes. Add the buttermilk, eggs, and vanilla extract. Beat on low speed until combined.
3️⃣ Add the cake flour, baking powder, and salt. Mix until just combined. Use a rubber spatula to scrape the sides and bottom of the bowl to ensure all of the ingredients are incorporated.
4️⃣ Divide the batter among the prepared pans. Bake for 25 to 30 minutes or until a toothpick inserted into the center of the cake comes out clean. Let the cakes sit in the pans on a wire rack to cool completely before turning them out onto the rack.
5️⃣ To assemble, frost in between the layers as you stack the cakes and then frost and decorate the top and sides.
While not entirely necessary, for a more even texture you can sift the flour, baking powder, and salt after measuring and before adding the dry ingredients to the batter.
This recipe can be made as three thin 9-inch layers, or two thick 9-inch layers.
